गाय और भैंस का दूध पोषक तत्व व खनिजों से भरपूर होता है। इस कारण इन्हें सेहत के लिए अच्छा माना जाता है। हालांकि गाय व भैंस के दूध में पोषक तत्वों की मात्रा व उसकी सुपाच्यता में अंतर होता है। ऐसा माना जाता है कि गाय का दूध आसानी से पच जाता है। भैंस का दूध अपेक्षाकृत भारी होता है। इसे पचाने में कई लोगों को दिक्कत भी होती है। यह वजन भी बढ़ाता है। डेयरी प्रोडक्ट के लिए भैंस का दूध ज्यादा प्रयोग में आता है।
16.5 करोड़ टन सालाना दूध के साथ उत्पादन भारत दुनिया में है सबसे ऊपर। अमेरिका दूसरे व चीन तीसरे नंबर पर है।
सुपाच्य और मानसिक विकास के लिए अच्छा:-
यह प्रोटीन का अच्छा स्रोत है। इसे नियमित लेने से मांसपेशियां मजबूत होती हैं। दांतों व हड्डियों के विकास के लिए कैल्शियम की ज्यादा जरूरत होती है। इसमें प्रचुर कैल्शियम दांत, हड्डियों को मजबूत करता है। दूध से त्वचा निखरती है। दूध मिलाकर नहाने से भी त्वचा में चमक आती है।
100 मी.ली. दूध में इन सात तत्वों की मात्रा अलग- अलग होती है :-
1. प्रोटीन :- भैंस के दूध में गाय के दूध की अपेक्षा प्रोटीन अधिक होता है। भैंस के दूध में 18% तो गाय के दूध 16% प्रतिशत प्रोटीन होता है। ज्यादा प्रोटीन के कारण भैंस का दूध कम सुपाच्य और गाय का दूध अधिक पाचक होता है।
2. फैट :- भैंस के दूध में 7% व गाय के दूध में 4% फैट होता है। ऐसे लोग जिन्हें खाना नहीं पचता, डाइटिंग या जिमिंग करते हैं उनके लिए गाय का दूध अच्छा है। भैंस के दूध में कार्बोहाइड्रेट 13 ग्राम व गाय में 12 ग्राम होता है।
3. कैलोरी :- भैंस के 100 मि.ली. दूध में 110 कैलोरी व गाय के दूध में 66 कैलोरी होती है। भैंस के दूध से बने डेयरी उत्पाद को ज्यादा समय के लिए स्टोर किया जा सकता है जबकि गाय के दूध वाली चीज़ों को नहीं कर सकते हैं।
4. कैल्शियम :- भैंस के दूध में कैल्शियम 41%,गाय के दूध में 27% होता है। भैंस के दूध में मैग्नीशियम,पोटैशियम, फॉस्फोरस, सोडियम की मात्रा अधिक होती है। गाय में विटामिन ए 9% तो भैंस के दूध में 7 प्रतिशत होता है।
5. कोलेस्ट्रॉल :- भैंस के दूध में गाय की अपेक्षा कोलेस्ट्रोल कम होता है। यह पीसीओडी, हाइपरटेंशन, किडनी रोग और मोटापे से पीड़ित लोगों के लिए लाभकारी है। गाय के दूध का घी पित्त शांत करता है व भैंस का घी कफ बनाता है।
6. विटामिन :- भैंस के दूध में सोडियम 127 मिग्रा व गाय में 105 मिग्रा होता है। यह महिलाओं व बच्चों के लिए अधिक उपयोगी होता है। भैंस के दूध में 2 प्रतिशत आयरन होता है जबकि गाय के दूध में नहीं होता है।
7. पानी :- गाय के दूध में करीब 87 प्रतिशत तक पानी होता है।इसलिए यह काफी हल्का होता है। गाय का दूध शरीर को हाइड्रेटेड रखता है। लेकिन भैंसे के दूध में ज्यादा पानी (83 फीसदी) होता है। इसके अलावा भैंस के दूध में उसे गाढ़ा बनाने वाले पदार्थ ज्यादा होते हैं।
